Cynara cardunculus

Violet blue flowers up to 200cm (80in) from June to September and growing 120cm (48in) wide. Prefers retentive, well drained soil in sun.

The fleshy leaf bases of the cardoon are sometimes eaten cooked or raw, as you would celery. The name Cynara comes from the Greek kyon, a dog, a reference to the tooth-shaped phyllaries (or bracts) - the bits that could be eaten.
